I think the mountboard will just get dusty and eventually not look very nice... and the fossil itself will also get dusty.. why not use a glass like Tru Vue Ultravue or Artglass? which often looks virtually invisible.

Yes Geospectrum the ones from Lion are the Ansell Powerflex 80-600 range, I found them a bit thick but they have very high cut resistance.

Liquitex matte gel is a multi purpose painting medium, I don't think mounting prints to a substrate is its intended primary use, so probably not the best first choice. As Prospero said, double sided tape is not the thing to use. A self adhesive mountboard would probably be the simplest solution. But...

I get this all the time with canvases, especially old ones where the edges are rough, or the stretcher bars are wonky, even many new canvases are very unsquare and need a wider rebate. I use these from Rose & Hollis, come in boxes of 100 and they are about 65mm x 10mm brass plated steel, they are easy to bend into shape with two pairs of pliers. Ref number is HG542 and are only about £6 a box
