I use the scan & stitch technique on a regular basis. If you overlap the scans by about 20% and then crop the each image to remove the border area it will work. As a backup I will normally photograph (telephoto lens) the work using the same system, small chunks, overlap and crop. In this instanc...

Set the stop for 750mm, cut a scrap piece measure the length and double it. Mark the moulding with a piece of tape on the back (non rebate) edge and align this with the lower blade. Make the cut, offer up the new length back to back with the remaining moulding and make another mark with tape.

Try Sketchup, it is also free. Simple to use and many tutorials online.

I had with this problem when gloss laminating a print onto dibond. Adding a sheet of foamcore between the upper blanket and the print maintains the gloss finish and silvering is not evident. Dibond is flat but of course non porus. Drymounting a picture is not a problem as the sponge blanket can go over the top to provide a porus layer. The big problem arises when using a gloss laminate. If you want to use photo black or mat black, then the epsons have to be drained and the tank swapped, where as the Canon has both online. The morso can be a bit of a space hog but you may be able to cut a hole in the garage wall and attach a long wooden box to the outside. This will take the left hand part of the moulding and save a couple of meters. It will need to be insulated to prevent condensation in winter.
