Renovation for our shop

First sorry fro my English and any mistakes that I may do.
We live and work at Greece Corfu (many of you may even have come) and we inherited the business family.
A shop with gifts and homeware and a workshop that is doing frames for over 40 years now.

But now the store and the workshop needs renovation. We hired someone to do the sketch of the new store and workshop.
But because all of you are working many years you have the experience that I don't have in 2 years that I am working with frames ... I want to ask for any tricks on how to set the workshop
Eg. the working place must have 250cm * 90cm dimencion
The frames should places vertically and not at the ground.
I saw a video that a guy brushed the picture with a brush in order to avoid the dust or any pieces, or another one used air pistol.
And if you can do I need pictures because I can't translate all the equipment that we use
Any help would be very appreciated.
